Food Safety SOPs Every Restaurant Must Have

Food safety isn't optional — it's the foundation of restaurant operations. One outbreak can destroy years of reputation. These SOPs keep your kitchen compliant and your guests safe.

Temperature Control

Every restaurant needs documented procedures for:

  • Receiving: Check delivery temps immediately. Reject anything outside safe range.
  • Storage: Follow FIFO (First In, First Out). Raw proteins on bottom shelves.
  • Cooking: Use calibrated thermometers. Know your minimum internal temps.
  • Holding: Hot food above 135°F, cold food below 41°F. Log every two hours.
  • Cooling: Two-stage cooling from 135°F to 70°F in two hours, then to 41°F in four hours.

Cross-Contamination Prevention

Train staff on the color-coded cutting board system. Separate raw and ready-to-eat prep areas. Wash hands for 20 seconds between tasks — not a quick rinse.

Cleaning and Sanitizing

Document your three-compartment sink procedure, sanitizer concentration (typically 200 ppm quaternary ammonium), and cleaning schedules for equipment, surfaces, and floors.

Allergen Management

Create an allergen matrix for every menu item. Train front-of-house staff to communicate allergen requests to the kitchen. Use separate utensils and prep areas for allergen-free orders.

Health Inspection Readiness

Walk your operation weekly using your health department's checklist. Fix violations immediately. Keep temperature logs, pest control records, and employee health agreements accessible.
